One reason why I love Helsinki are the forests. And especially during the mushroom season.

Start the mushroom hunting with the easy kinds such as chanterelles, boletes and yellowfeet. Pick up a mushroom guidebook from a library. When you head into the forest, take along a knife, a bucket and plastic bags for different mushroom kinds. Look for a forest from Google Maps (for example Nuuksio in Espoo). Seek a bus from Journey Planner that takes you to the edge of the forest, preferably to the less popular edge.

Pick only  mushrooms that you have identified with certainty.

Orange Birch Bolete (Leccinum versipelle)

Two large boletes are enough for a dinner.

Chop the boletes. Fry with a hot pan for 20 minutes until the water has evaporated from the mushrooms, so that they almost stick to the pan. Add butter, salt, pepper and crème fraîche. Eat with rice or potatoes. Add fresh parsley and parmesan if you like.
